This lot comes from Roberto “Beto” Machado, who manages the 150-hectare Fazenda São José Condado in Bacaio, near Santa Rita do Sapucaí. The farm dates back to the mid-1800s and is now planted with a mix of Bourbon types and modern hybrids like Mundo Novo, Catuaí, Arara, and Catucaí.
Harvested by hand using vibrating rake-style tools, the cherries are processed via pulp natural method — a hybrid between washed and honey processing — resulting in balanced sweetness and low acidity.
